Dinner tonight...Steak and Rice

Tonight's dinner is an oldie but goodie in our family. I doubt the girls will eat it, but we'll see.

Lolly's Steak and Rice

Medium onion, sliced thin
1 stick butter
2 lbs. cube steak
Lowry's season salt
Flour to coat
12 oz can of Evaporated Milk
Regular milk if necessary

  • Freeze cube steak to make it easier to cut.
  • Melt butter in large skillet. Cook onions until tender.
  • While onions are cooking, slice into 1 inch pieces. In bowl, season steak with season salt. Sprinkle with 2-3 tablespoons of flour (enough to coat steak).
  • Once onions are tender, add steak. Cook until golden brown and is no longer pink.
  • Pour can of evaporated milk to make a gravy.
  • If it's too thick, you can pour in some regular milk too.
  • Season to taste with salt and pepper.
  • Serve over white rice.

I can remember as a little girl that being one of the 3 requests I'd make to Mama every night for dinner..too funny!

My mom used to make a vs. of this too. We called it smothered steak and rice. She would do just what you said, browning the steak on both sides and then putting the steak on a bed of minute rice and pour the gravy mixture over it and bake it in the oven for 20-30 minutes. I use to do this when the kids were at home.....but my cooking days are just about over. Hubby is the cook now.

Ooooooh, this sounds so good! My mouth is watering. And it's a simple dish too, which is my very favorite. I will have to try and make this sometime!
